About THE CHEF

Registered dietitian nutritionist, Kasey Gamble Lobb, in the kitchen with two chefs in Italy

Nutrition Education through Cooking Classes, Cookbooks, and Tours

I'm Kasey Lobb MS RDN, a food nerd -- that's me, in the apron and fierce vintage earrings, with two excellent chefs in Venice.

As a practicing registered dietitian nutritionist for over 20 years, I aim to heal with food. What we eat is powerful! For over 16 years in my private practice, I have helped clients with food sensitivities and autoimmune diseases. It's been wonderful to witness how eating healthier changes lives. I love to cook gluten-free and dairy-free and learn all I can about food.

MY STORY

Even before achieving the usual age of midlife crises, I began to experience a crazy set of symptom; bloating, varied GI distress (unexplainable constipation and diarrhea), horrible periods, cystic acne, depression, joint pains, trouble sleeping, brain-fog, fatigue, back pain, and stress. My kids were very young and my mom had just died - I was in a hot slow-burn crisis of inflammation. I struggled several years with medical misadventures searching for answers. I was determined to identify and treat the root cause of my symptoms. It took visiting a dozen medical specialists and hundreds of hours of study. I discovered how common food additives, gluten, and dairy products were contributing to major inflammation in me. Since then, my professional education has focused on Integrative and Functional Nutrition and Medicine. I have combined my health struggles, education, clinical experience, and passion to heal the root cause of inflammation.

TRAVEL

I follow a gluten- and dairy-free lifestyle but can really struggle when traveling. Food sensitive options are often an afterthought in the restaurant and tourism industry. It can be an incredibly disheartening, not to mention hungry, situation. I’ve dined in the culinary capitals of Italy and France, surrounded by fragrant, exquisite, piping-hot, glutinous foods but I may end up with a dry gluten-free cracker wrapped in plastic. I have discovered chefs, restaurants, and hoteliers want to serve us with food sensitivities better! And with proper planning through our small group tours, they really do!

With Appetite to Travel, we create and teach cooking classes and conduct worldwide tours for food enthusiasts -all with delicious gluten-free and dairy-free options.

EDUCATION

Beyond my 20 years clinical experience, my formal education includes; Bachelor and Master of Science degrees in Nutrition and Dietetics and Institutional Administration. Registered and Licensed Dietitian Nutritionist. Advanced Certificate of Training in Adult Weight Management through the Academy of Nutrition and Dietetics. Certified Lifestyle Eating and Performance Therapist specializes in treating inflammatory food reactions.

I am a certified plant-based chef and have trained in the USA, Costa Rica, France, Israel, Ireland, Italy, and Turkey.
